Our Story

Boracay's Best-Kept Culinary Secret

Tucked in an alley near Metrobank at Station 1, Salsa Fusion Restaurant is the kind of place you have to know about — and once you find it, you never forget it. Part of the Red Coconut Hotel Group, Salsa was born from a desire to elevate Boracay's dining scene beyond the beachside staples.

Our kitchen takes the soul of Filipino cooking and layers it with the bold heat of Mexican tradition and the elegance of Spanish technique. The result is a menu where every dish tells a story of cultural harmony — familiar yet surprising, comforting yet adventurous.

Esquire named us one of the Best Restaurants of 2022. TripAdvisor visitors have given us a 4.9 out of 5. But the highest honor is still the guest who walks back in the next evening because they couldn't stop thinking about that first bite.

"Off the beaten track and a bit hard to find but totally worth it! Food was delicious. Service great. A tranquil setting away from the hustle and bustle. Highly recommend a visit if coming to Boracay!"

"A hidden gem in the truest sense. The rooftop ambiance with the paper flags and string lights feels like a fiesta every night. The Pulpo Inasal was unlike anything I had tasted before — beautifully plated and bursting with flavour."

"We came for Esquire's recommendation and left planning our return. The Porchetta Bagnet is a must-order — 12 hours of slow cooking makes all the difference. Rooftop sunset dining at its finest."
