Where It All Began

Born from a Passion for Filipino Cuisine

Salsa Fusion Restaurant was created with a singular belief: that Filipino cuisine deserves to stand alongside the world's great culinary traditions. Part of the Red Coconut Hotel Group, Salsa was established on the rooftop of Serene La Playa hotel at Station 1 — one of Boracay's most storied stretches of white sand.

The founders saw an opportunity in a place that visitors often passed through without stopping. Tucked down an alley near Metrobank, the restaurant was deliberately designed as a destination you had to seek out. The journey to find Salsa — a few turns off the crowded beachfront — became part of its identity as a hidden gem.

The kitchen philosophy emerged from a deceptively simple idea: take the flavors Filipinos grew up with and let them lead a conversation with Mexican heat and Spanish technique. Dishes like the Porchetta Bagnet — slow-cooked lechon belly layered with carnitas technique — or the Pulpo Inasal — grilled octopus anchored in Filipino marinade — are not compromises between cuisines. They are arguments that the best of every tradition belongs at the same table.

Every dish on our menu begins with a Filipino ingredient, technique, or tradition at its core. We are not a restaurant that adds Filipino elements to a foreign framework — we invert the relationship. Our heritage is the foundation; global influences are the conversation partners.

Craft Over Convenience

The Porchetta Bagnet requires twelve hours of slow cooking. The broth for our Beef Bulalo Ravioli is built from scratch each service. We choose the longer path when it produces a better result, because our guests can taste the difference between something made with urgency and something made with care.

The Setting Is Part of the Dish

Boracay's sunsets belong to everyone, but we believe they taste better on our rooftop with papel picado overhead and candlelight on the table. The ambiance at Salsa is not decoration — it is an essential ingredient in the dining experience, as carefully considered as the seasoning in your plate.

A Table Is Waiting on the Rooftop

We are open daily from 12:00 PM to 10:00 PM. Walk-ins are always welcome, though we recommend reserving a table to secure your preferred time — especially at golden hour.

Our location is part of the discovery. Ask to be dropped off at Jin Jiang Inn, face the hotel, and take the pathway to its left. Walk toward Salsa and look for the rooftop — the paper flags will guide you up.
